Pronto Bacon Linguine

This Pronto Bacon Linguine is a crowd pleaser and is one to get the family round the dinner table for.
Ingredients
- 90 g British smoked bacon lardons
- 1 whole echalion shallot - halved, peeled and thinly sliced
- 120 g sliced mushrooms
- 1 whole courgette - trimmed, quartered lengthways and chopped into small pieces
- 1 whole garlic clove - peeled and grated
- 180 g linguine
- 10 g vegetable stock paste
- 1 tsp Italian style herbs
- 150 g creme fraiche
- 40 g grated hard Italian style cheese
- 1 tbsp olive oil - for cooking
- 0.5 tsp salt - for pasta water
Instructions
- Bring a large saucepan of water to the boil with 1/2 tsp salt for the pasta.
- Heat a drizzle of oil in a large frying pan on medium-high heat.
- Add bacon lardons and cook until golden, 3-4 minutes.
- Halve, peel and thinly slice the shallot.
- Trim the courgette, quarter lengthways and chop into small pieces.
- Peel and grate the garlic.
- Lower heat and add shallot, mushrooms and courgette to lardons.
- Cook until vegetables are softened and starting to brown, 4-5 minutes.
- Add garlic and cook until fragrant, 1 minute.
- Add the linguine to the boiling water and cook according to package instructions until al dente.
- Add vegetable stock paste, Italian herbs and 100ml water to the pan. Stir well.
- Add creme fraiche and bring to a gentle simmer.
- Drain the pasta, reserving a little pasta water.
- Add the drained pasta to the sauce and toss to combine, adding pasta water if needed.
- Serve immediately topped with grated cheese.
