Pronto Bacon Linguine

This Pronto Bacon Linguine is a crowd pleaser and is one to get the family round the dinner table for.

Ingredients

Instructions

  1. Bring a large saucepan of water to the boil with 1/2 tsp salt for the pasta.
  2. Heat a drizzle of oil in a large frying pan on medium-high heat.
  3. Add bacon lardons and cook until golden, 3-4 minutes.
  4. Halve, peel and thinly slice the shallot.
  5. Trim the courgette, quarter lengthways and chop into small pieces.
  6. Peel and grate the garlic.
  7. Lower heat and add shallot, mushrooms and courgette to lardons.
  8. Cook until vegetables are softened and starting to brown, 4-5 minutes.
  9. Add garlic and cook until fragrant, 1 minute.
  10. Add the linguine to the boiling water and cook according to package instructions until al dente.
  11. Add vegetable stock paste, Italian herbs and 100ml water to the pan. Stir well.
  12. Add creme fraiche and bring to a gentle simmer.
  13. Drain the pasta, reserving a little pasta water.
  14. Add the drained pasta to the sauce and toss to combine, adding pasta water if needed.
  15. Serve immediately topped with grated cheese.
